Over the past several decades, the numbers of those carrying forth the craft of traditional butchery has declined dramatically. A gulf between generations has formed, and with this gap there is the grave risk of losing valuable knowledge that has been handed down for generations.

We will ensure that traditional methods of the butchery craft will not be lost due to growing industrialization, automation in processing, and consumer apathy. The perseverance of our trade relies on reaching back to its origins and preserving the wisdom of our mentors while integrating modern values to create a vision for the future of butchery.

It is a Butcher’s Manifesto mission to connect these key craftsman of traditional butchery to projects that will secure valuable knowledge for this future vision.

WE INSIST ON AN HONEST AND TRANSPARENT APPROACH TO MEAT.

The rise of conventional meat conglomerates has given priority to raising livestock breeds with the goals of quickened growth, consistent conformation, and maximum feed conversion. Traditional breeds excelling in regional climates, hardiness, unique attributes, and cultural value are being lost in the process.

The pinnacle of our craft, and the products of our expertise, relies on exceptional breeds and all the variation represented within. Preserving heritage livestock genetics is paramount to preservation of traditional butchery and advancement of the craft.

It is a Butcher’s Manifesto mission to educate key parties throughout the supply chain to the value of heritage genetics – for the welfare of the animals, for the success of butchery, and for the health of the planet.

The fast and cheap approach to meat production has eliminated the skillful understanding of whole-carcass cutting and value-added production. Shortcuts are not part of the butchery craft.

Superior products begin with exceptional meat and are the result of honed understandings of muscle structures, bone conformation, and learned technique. Preservation is the gift of skilled charcutiers. Efficiencies are attained through an attentiveness that originates in the foundations of butchery education.

It is a Butcher’s Manifesto mission to ensure present butchery educators bestow all their know-how and expertise to those following in the footsteps of our craft and to provide butchers on the journey towards exceptionalism a clear path to achievement.

Processing jobs are filled by unskilled labor and conditions are often intolerable for sustained careers. It’s no wonder why pride and joy in the craft has waited accordingly. Looking to the successes of our forebears, in regenerative agricultural and honorable craftsmanship, we can see a pathway towards reinvigorating butchery with a pride that inspires all those we service.
